Try the Easy Honey Chilli Potatoes for Midnight Hunger Pangs...!

What happens when you don't get to eat an interesting dinner after a long day at work??? Well in my case I eat, rant, look at mum with a hope, hoping that the dinner menu can be changed with magic, rant and swap TV channels in agony! And this Tuesday night, when I was swapping channels with agony again, I came across a food show- 'Rude Boy Food' on TLC that just made my day or I should say my night! The show host Aron Craze is wonderful with food, he is not like any other perfect food show host, clad in a chef's clean outfit, he is instead a raw, messy, like-many-of-us cook! He cooks with local ingredients, travels, spills ingredients yet produce a gorgeous looking dish! And boy, this man did inspire me to put on my apron and do the culinary magic at 12:40 am in the night myself. Here goes my version of easy recipe of Honey Chilli Potato, tasty and fulfilling!


Yummilicious honey chilli potatoes

Ingredients

2 Potatoes peeled and cut into the shape of french fries
2 Crushed garlic cloves
1tsp red chilli powder
2 tsp tomato sauce
Salt to taste
1Tbsp tomato Sauce
1 tsp red chilli sauce
2 tsp vinegar 
2 Crushed garlic cloves
2 tbs honey (inc case you don't like it much sweet then put 1 tbs honey)
1 tbsp oil
few coriander leaves or spring onions/onions

Method
1. Heat oil in a non-stick pan. Deep fry potato fingers till crisp and golden. Drain on an absorbent paper.
2.Heat two tablespoons oil in another non-stick pan. Add crushed garlic cloves. Saute for a minute.
3.Add spring onion or onions till they are translucent.4.Add red chilli sauce, vinegar, red chilli powder, tomato sauce, sugar and honey. Mix well and cook for half minute.5.Add salt and mix well. Lower the heat and add fried potato wedges. Mix well, add spring onion greens and mix again.6.Garnish with coriander leaves and eat it hot!

Easy breezy recipe – Guaranteed success for lazy cooks..!

So the inspiration behind the birth of below recipe was pretty substantial. I had little time, wanted to put little effort, had a warmed up couch waiting for me and did not want to leave its comfort for long, plus cannot stress enough on the fact I was damn lazy ( just to cite an example to prove the degree of my laziness , mom’s draggy saas bahu serials were on and even though I was getting bored to death the problem was the remote was 2 ft away from me so I decided it was not worth moving).



But as I could not ignore my stomach rumbling from hunger the creative genius in me woke up and worked out the best short cut to generate a culinary delight which is nothing less than an ingenious master chef dish ( and to think they put so much of effort into them...they should just read the blog for tips ;))




Here it goes guys easy ingredients, simple methods and outstanding results.
Pasta in red sauce



Ingredients:-
Spring onions(6-7) , finely diced
Garlic chopped finely (6-7cloves)
Tomatoes(10)
Olive oil
Packet of pasta(any shape)
Dried basil leaves
Salt and sugar
Chilli flakes
2 CAPS VODKA for a kick

Method:-
First blanch the tomatoes in hot water until just soft. Peel of the skin and make puree in a mixer.
Boil pasta till cooked. Sieve it and pour little olive oil and mix so pasta does not stick and keep aside.
Saute spring onions and garlic for one two minutes in olive oil until onions are just soft. Add the tomato puree . Add salt , dried basil leaves 2 tbsp , chilli flakes. Cover and simmer on low heat until puree is cooked. Add 1 tsp sugar for a bit of sweetness. Add 2 caps vodka for a kick. When all water has evaporated and puree has become thick add the boiled pasta . Stir well till pasta is well coated.

P.S.- Grate parmesan cheese on top and bake in oven till cheese melts and is golden brown. Also do not keep on sipping on the vodka while making the dish as there will be none left to put in the sauce (talking from experience)

The story of Choc-o-bake

It started with me and my mother watching 'my' favorite Tv show: The Nigella Lawson's- Nigella Bites. She isn't just a food enthusiast, but a food goddess, she know how to cook, the perfect way! What I truly love about her, is that perfect smile she wears all through out the cooking procedure, that also includes her highly appetizing sexy expressions. Yes, I love food, and the art of making it...!

Anyway, so as we finished off with her show, grabbing a paper and pen, all set in mood to bake, I stormed into my kitchen!
from the bedroom to the kitchen, I really didn't look anywhere, but wait, as soon as I started looking for the ingredients of my dish, I noticed a familiar, really known face, standing with anticipation next to the microwave, I gave a look that was meant to say, 'huh? why can't you ever let me do things on my own, i am all grown up you know.' And I was successful in doing so, because the familiar feminine figure, my MOTHER, left the kitchen with a silent grief.


Er..there was an awkward silence for a while, but Nigella's recipe was ruling my mind and I continued my baking spree. So after listing and figuring out most of the ingredients, I started running all around for the cake. Felling like a complete Nigella, i mixed evrything i found into a loarge bowl! Ok i was happy till i put my skills into the micro for baking! Half an hour I kept staring at the micro screen and what i got was a gooey, greasy, undercooked piece of not-at-all edible cake, FINE, it was something close to a cake!

And then was the climax and my hero;
We started TOGETHER, all of a sudden, my Flat-ly placed, Under cooked byte saw a ray oh hope with mamma's fingers coming into play! Soon the kitchen witnessed a magic show, I tell you why, because the utensils seemed to move on there own, the ingredients of the cake followed the measuring cup rule all by themselves, Mum was like a fairy strolling around with a smile, wider than that of Nigella, Literally! My lips curled into smile when I saw her taking the charge of the Baked ruins of past...! She looked much smarter than I thought she would be, but unlike us, (the children), her skills in the kitchen did not affect her attitude, she did not make me feel like a miss-know-it-all-NOT at all.

It is rightly said that one can learn alot by just looking at things carefully, I looked at this beautiful woman baking with passion and ever since I am thinking that how in the middle of growing up, we often forget that our parents who have alwyas been doing so much more than we ever expect, are growing old too. They aren't moody like most of our friends who would do the most important things for us just because we would drive them around or take them for parties to big places, nor do they come out to be the seasonal bf's/gf's whom we end up giving beyond our capabilities, often leading to regret.
Even thou I was never so vocal about my mom being as good as Nigella, or maybe more special than her, we did have a great time sharing laughs, giggles, serious expressions, all this and more baking, TOGETEHR!

And today remembring my mum's special Choco-cake, I feel I have to go a long way in baking and in Life..Yeah!

But wait, here's the recipe for the successful cake mix:
1. Take 1 cup Flour
2. Add 1/2 cup of oil to the flour and whisk.
3. To the mixture add 1 and a half cup of Sugar and half cup of milk, mix well.
4. Break 2 eggs, whisk them and add it to the mixture.
5. Add 2 teaspoon vanilla essence, 2 Table spoon Coco powder and 1 teaspoon Baking soda.
6. Lastly add some melted choclate and mix the batter with great LOVE and bake...!
